What is apparent attenuation versus real attenuation?
Apparent attenuation is what your hydrometer reads because ethanol has a lower specific gravity (0.789) than water, depressing the hydrometer bulb. Real attenuation accounts for alcohol density to measure actual sugar percentage converted by yeast.
Why does standard (OG - FG) * 131.25 fail on imperial stouts and double IPAs?
The 131.25 multiplier was designed for 1.040-1.055 session beers. As original gravity exceeds 1.070, ethanol production changes the specific volume of the solution, requiring the Hall polynomial to avoid understating alcohol by up to 0.8% ABV.
