Originating in Vermont in the early 2010s, this style upended the craft brewing doctrine of crystalline clarity and aggressive IBU bitterness. By shifting hop additions almost exclusively to whirlpool and active-fermentation dry-hopping (biotransformation), and incorporating high-protein grains, brewers captured volatile monoterpenes without stripping harsh hop tannins.
