Origin, Heritage & Craft Tradition

Originally brewed during the cold winter months on Wallonian farms in southern Belgium to hydrate seasonal field workers ('saisonniers') during the summer harvest. It was brewed with whatever local grains were on hand—barley, wheat, spelt, rye—and hopped generously for preservation. The defining signature is its voracious diastatic yeast, which ferments nearly all sugars down to a bone-dry finish.
