Historically brewed in Bavaria during March ('März') before the onset of warm summer months when wild airborne yeasts made brewing hazardous. The beer was stored in deep Alpine ice cellars until tapped in late September to celebrate the autumn harvest and royal weddings—giving birth to Oktoberfest.
